  • 1 3-4 lb whole chicken
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt

  • 1 lemon
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme

Directions

Step 1

Preheat your oven to 425°F (220°C).

Remove the giblets from the chicken (if included) and pat the chicken dry with paper towels.

Place the chicken on a clean work surface or cutting board. Drizzle olive oil all over the chicken, ensuring it is evenly coated.
