Ingredients

  • 1 pound smoked kielbasa sausage
  • 1 package (20 oz) Simply Potatoes diced potatoes with onions
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Slice the smoked kielbasa sausage into 1/4-inch thick rounds. Set aside.

Step 2

Wash and core the red, yellow, and green bell peppers, then slice them into thin strips.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 4

Add the sliced kielbasa to the skillet and cook for 4-5 minutes, stirring occasionally, until the sausage is golden brown. Remove the kielbasa from the skillet and set aside.

Step 5

Add the remaining tablespoon of olive oil to the skillet. Lower the heat to medium and add the minced garlic. Cook for 30 seconds until fragrant.
