  • 1 cup chicken broth
  • 0.5 cup sour cream
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 2 cups cooked white rice
  • 2 tablespoons butter, melted
  • 1 cup crushed Ritz crackers
  • 1 teaspoon dried parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.

Season the chicken breasts with salt and black pepper on both sides.
