Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 teaspoon Salt
  • 6 slices Bacon
  • 1 Yellow onion, finely chopped
  • 0.25 cup Apple cider vinegar
  • 1 tablespoon Granulated sugar
  • 2 teaspoons Dijon mustard
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Place the potatoes in a large pot and cover with cold water. Add the salt and bring to a boil over medium-high heat.

Step 2

Cook the potatoes for 10-15 minutes, or until they are just fork-tender but not falling apart. Drain and let them cool slightly.

Step 3

While the potatoes are cooling, cook the bacon in a large skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate and crumble once cooled.

Reserve 2 tablespoons of the bacon grease in the skillet and discard the rest. Add the chopped onion to the skillet and sauté over medium heat until softened, about 3-4 minutes.
