Ingredients

  • 2 pieces ribeye steak (1-inch thick)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 pieces garlic cloves, smashed
  • 3 pieces fresh thyme sprigs
  • 1 piece fresh rosemary sprig

Directions

Step 1

Take the steaks out of the refrigerator 30 minutes before cooking to bring them to room temperature. This helps the steaks cook evenly.

Step 2

Pat the steaks dry with paper towels to remove excess moisture. Season both sides generously with salt and black pepper.

Step 3

Heat a large cast-iron skillet over medium-high heat until very hot, about 3-4 minutes.

Step 4

Add olive oil to the skillet, then carefully place the steaks in the pan. Do not overcrowd—cook in batches if necessary.

Step 5

Sear the steaks for 3-4 minutes on the first side without moving them to achieve a deep golden-brown crust.

Step 6

Flip the steaks and immediately reduce the heat to medium. Add the butter, smashed garlic cloves, thyme, and rosemary to the skillet.

Step 7

Tilt the skillet slightly and use a spoon to baste the steaks with the melted herb butter. Continue basting and cooking for another 3-4 minutes, or until the steaks reach your desired level of doneness (125°F for medium-rare, 135°F for medium).

Step 8

Remove the steaks from the skillet and let them rest on a cutting board or plate for 5 minutes to retain their juices.

Step 9

Slice the steaks against the grain for maximum tenderness and serve hot with a drizzle of the herb butter from the skillet.
