Ingredients

  • 20 pieces eggroll wrappers
  • 1 pound ground pork (or chicken or turkey)
  • 2 cups green cabbage, finely shredded
  • 1 cup carrots, julienned (or grated)
  • 3 stalks green onions, chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 4 cups vegetable oil (for frying)
  • 1 tablespoon water
  • 1 tablespoon cornstarch

Directions

Step 1

In a large skillet or wok, heat 1 teaspoon of sesame oil over medium-high heat.

Step 2

Add the ground pork (or your chosen meat) and cook until browned and fully cooked, breaking it apart as it cooks. Drain excess fat if needed.

Step 3

Add shredded cabbage, julienned carrots, chopped green onions, minced garlic, and minced ginger to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still slightly crisp.

Step 4

Stir in soy sauce and mix well. Remove the skillet from heat and let the filling cool slightly.

In a small bowl, mix water and cornstarch to form a slurry. Set aside; this will be used to seal the eggrolls.

Lay one eggroll wrapper on a clean surface in a diamond shape (with one corner pointing toward you). Place 2-3 tablespoons of the cooled filling near the bottom corner of the wrapper.

Fold the bottom corner of the wrapper up over the filling, then fold in the left and right corners to form an envelope shape. Roll the wrapper tightly toward the top corner, lightly brushing the cornstarch slurry along the edges to seal.

Repeat this process with the remaining wrappers and filling.

In a deep pot or Dutch oven, heat 4 cups of vegetable oil to 350°F (175°C).

Carefully add the eggrolls to the hot oil in small batches, being careful not to overcrowd the pot. Fry for 3-4 minutes, turning occasionally, until the wrappers are golden brown and crispy.
