  • 2 tablespoons all-purpose flour
  • 4 cups chicken or seafood stock
  • 1 large russet potato (peeled and diced into 1/2-inch cubes)
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

In a large pot or Dutch oven, melt the butter and olive oil over medium heat.

Step 2

Add diced onion and celery, cooking for 5 minutes or until softened. Stir in the minced garlic and sauté for another 1 minute.

Sprinkle the flour over the vegetables and stir well, cooking for 1-2 minutes to eliminate the raw flour taste.
