  • 1 pound fresh sea scallops
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 whole lemon
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Pat the scallops dry with paper towels to remove excess moisture. This helps them sear properly.

Step 2

Season the scallops on both sides with salt and black pepper.

Step 3

Mince the garlic and finely chop the parsley. Set both aside.

Step 4

Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of the butter. Allow the skillet to get hot but not smoking.

Place the scallops in the skillet in a single layer, making sure not to overcrowd. Sear for 1.5 to 2 minutes on one side until golden brown. Do not move them during this time.
