Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 3 cups whole milk
  • 0.5 cup granulated sugar
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 0.33 cup raisins (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring the water to a boil over medium-high heat.

Step 3

Stir in the rinsed rice, reduce the heat to low, and cover the saucepan with a tight-fitting lid. Simmer for about 15 minutes or until the rice has absorbed the water.

Step 4

Add the milk, sugar, salt, and ground cinnamon to the cooked rice. Stir to combine.

Step 5

Increase the heat to medium and cook, stirring frequently to prevent sticking, for about 20 minutes, or until the mixture thickens and becomes creamy.

Step 6

Stir in the vanilla extract, butter, and raisins (if using) and mix well until the butter is melted and fully incorporated.

Step 7

Remove the saucepan from heat and let the pudding cool for 5-10 minutes. The pudding will continue to thicken as it cools.

Step 8

Serve warm or chilled, garnished with an extra sprinkle of cinnamon if desired.
