Ingredients

  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line the bottoms with parchment paper for easy release.

Step 2

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed using a hand or stand mixer until the batter is smooth and creamy.

Step 4

Reduce the mixer speed to low and carefully add the boiling water to the batter. Mix until just combined. The batter will be thin, but this is normal.

Step 5

Divide the batter evenly between the prepared pans. Tap the pans gently on the counter to remove any air bubbles.

Step 6

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center of the cakes comes out clean.

Step 7

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely before frosting.

Step 8

Frost and decorate as desired. The cake pairs beautifully with chocolate buttercream, cream cheese frosting, or a simple dusting of powdered sugar.
