Ingredients

  • 4 medium zucchini
  • 1 medium onion
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash and dry the zucchini, then slice them into thin rounds.

Step 2

Peel and dice the onion into small pieces.

Step 3

Peel and mince the garlic cloves.

In a large pot, heat the olive oil over medium heat.

Add the onion and garlic to the pot and sauté for about 3-4 minutes until softened and fragrant.
