Ingredients

  • 2 tablespoons Olive oil
  • 2 pieces Boneless, skinless chicken breasts
  • 1 medium Yellow onion, diced
  • 3 pieces Garlic cloves, minced
  • 4 cups Chicken broth
  • 2 cups Canned white beans (e.g., Great Northern beans), drained and rinsed
  • 4 ounces Canned green chiles, diced
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 3 tablespoons Sour cream (optional, for serving)
  • 0.5 cup Shredded Monterey Jack cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the chicken breasts and sear on each side for about 3-4 minutes until lightly browned. Remove the chicken and set it aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and cook for an additional 1 minute, being careful not to let it burn.

Step 5

Pour in the chicken broth and bring to a gentle boil.

Step 6

Add the white beans, green chiles, cumin, oregano, coriander, salt, and black pepper. Stir to combine.

Step 7

Return the chicken breasts to the pot. Reduce the heat to a simmer and cover. Cook for 15 minutes or until the chicken is cooked through and tender.

Step 8

Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.

Step 9

Stir in the lime juice and cook for another 2 minutes to combine the flavors.

Step 10

Serve the chili hot, garnished with chopped cilantro, a dollop of sour cream, and shredded Monterey Jack cheese, if desired.
