Ingredients

  • 4 pieces pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 0.5 cup ketchup
  • 0.25 cup white vinegar
  • 2 tablespoons soy sauce
  • 0.33 cup brown sugar
  • 0.5 cup pineapple juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 0.5 cup pineapple chunks (optional)
  • 1 piece green bell pepper, chopped (optional)

Directions

Step 1

Pat the pork chops dry with paper towels and season each side with salt and black pepper.

Step 2

Heat the vegetable oil in a large skillet over medium-high heat. Sear the pork chops for 3-4 minutes per side, or until golden brown. Remove and set aside.

Step 3

In a medium bowl, whisk together ketchup, white vinegar, soy sauce, brown sugar, and pineapple juice to create the sweet and sour sauce.

Step 4

In the same skillet, lower the heat to medium and pour in the prepared sauce mixture. Stir well and scrape up any browned bits from the pan to incorporate flavor.

Step 5

In a small bowl, mix cornstarch with water to create a slurry. Add the slurry to the sauce and stir until the sauce thickens, about 1-2 minutes.

Step 6

Return the pork chops to the skillet, spoon some sauce over them, and cover the skillet with a lid. Cook for 8-10 minutes, or until the pork chops are fully cooked (internal temperature reaches 145°F/63°C).

Step 7

For additional flavor and texture, add pineapple chunks and chopped green bell pepper to the skillet during the last 3-5 minutes of cooking.

Step 8

Serve the sweet and sour chops hot with rice or steamed vegetables, drizzling extra sauce over the top.
