Ingredients

  • 300 grams fresh strawberries
  • 50 grams granulated sugar
  • 200 ml heavy whipping cream
  • 1 teaspoon powdered gelatin
  • 2 tablespoons water
  • 1 teaspoon vanilla extract

Directions

Step 1

Wash the fresh strawberries thoroughly and remove the stems. Set a few strawberries aside for garnish, if desired.

Step 2

Blend the strawberries in a blender or food processor until completely smooth. Strain the puree through a fine-mesh sieve into a bowl to remove the seeds. You should have approximately 200ml of smooth strawberry puree.

Step 3

In a small bowl, sprinkle the powdered gelatin over the water and let it sit for about 5 minutes to bloom.

Step 4

In a small saucepan over low heat, warm up half of the strawberry puree (about 100ml). Do not let it boil. Once warm, remove from heat and stir in the bloomed gelatin until completely dissolved. Let this mixture cool to room temperature.

Step 5

In a mixing bowl, whip the heavy whipping cream with an electric mixer on medium speed until soft peaks form. Add the granulated sugar and vanilla extract, and continue beating until stiff peaks form.

Step 6

Gently fold the remaining strawberry puree and the gelatin mixture into the whipped cream in batches. Fold carefully to maintain the mousse’s airy texture.

Step 7

Spoon or pipe the strawberry mousse into serving glasses or bowls, smoothing the tops as needed.

Chill in the refrigerator for at least 2 hours, or until the mousse is set.
