Ingredients

  • 4 Flour tortillas
  • 2 cups Fresh spinach leaves
  • 1 cup Shredded cheese (e.g., cheddar, mozzarella, or a Mexican blend)
  • 1 tablespoon Olive oil
  • 1 clove Garlic (minced)
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Butter

Directions

Step 1

Heat olive oil in a medium-sized skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 2

Add the fresh spinach leaves to the skillet and cook for 2-3 minutes until wilted. Season with salt and black pepper. Remove from heat and set aside.

Lay out two flour tortillas on a clean surface. Sprinkle half of the shredded cheese evenly over each tortilla.

Divide the cooked spinach evenly between the two tortillas, spreading it on top of the cheese. Sprinkle the remaining cheese over the spinach. Place another tortilla on top of each to make two quesadillas.
