Ingredients

  • 5 medium (about 2 lbs) russet potatoes
  • 4 tablespoons unsalted butter
  • 1 cup whole milk
  • 4 ounces (softened) cream cheese
  • 1.5 cups frozen corn
  • 1 medium (diced) green bell pepper
  • 1 medium (diced) red bell pepper
  • 3 stalks (chopped) green onions
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Peel the russet potatoes and cut them into evenly-sized chunks. Place them in a large pot and cover with cold water. Add a pinch of salt, bring to a boil, and cook until the potatoes are fork-tender, about 15-20 minutes.

Step 2

While the potatoes are boiling, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced green bell pepper, red bell pepper, and corn. Sauté for 5-7 minutes, or until the veggies are slightly tender. Remove from heat and set aside.

Step 3

Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 4

Drain the boiled potatoes and return them to the pot. Add butter, cream cheese, and milk. Mash the potatoes until smooth and creamy. Stir in the cumin, chili powder, paprika, salt, and black pepper.

Step 5

Fold the sautéed bell peppers, corn, and chopped green onions into the mashed potatoes until well combined. Taste and adjust seasoning if needed.

Step 6

Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the shredded cheddar cheese on top.

Step 7

Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

Step 8

Remove from the oven, let cool for 5 minutes, and serve warm. Enjoy your Southwestern Mashed Potato Cornfetti Casserole SP5!
