Ingredients

  • 6 pieces boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 14 ounces diced tomatoes (canned)
  • 1 cup chicken broth
  • 0.5 cup kalamata olives, pitted and halved
  • 0.5 cup feta cheese, crumbled
  • 2 teaspoons dried oregano
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 2

Season the chicken thighs with half of the salt and pepper, then sear them in the hot pan for 3-4 minutes per side until golden brown. Remove the chicken and set aside.

Step 3

In the same pan, add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute, stirring frequently.

Step 4

Pour in the diced tomatoes and chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the oregano, remaining salt, and pepper.

Step 5

Return the chicken thighs to the pan, nestling them into the sauce. Reduce the heat to low, cover the pan, and let the mixture simmer for 20 minutes.

Step 6

After 20 minutes, uncover the pan and stir in the kalamata olives and lemon juice. Simmer uncovered for an additional 5 minutes to allow the flavors to meld and the sauce to slightly thicken.

Step 7

Remove the pan from the heat and sprinkle the dish with feta cheese and fresh parsley.

Step 8

Serve hot with a side of rice, orzo, or crusty bread to soak up the flavorful sauce.
