  • 12 ounces andouille sausage, sliced

  • 1 medium green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 4 cloves garlic cloves, minced
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1 14.5-ounce can crushed tomatoes
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 1 leaf bay leaf
  • 2 tablespoons fresh parsley, chopped
  • 2 stalks scallions, sliced (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Add the sliced andouille sausage to the pan and cook for 4-5 minutes, until browned. Remove the sausage and set aside.

In the same pan, sauté the shrimp for 2-3 minutes, or until just pink. Remove and set aside with the sausage.
