Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 1 pound ground beef or lamb
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 0.25 cup milk
  • 0.5 cup cheddar cheese, shredded (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Bring a large pot of salted water to a boil and cook the cubed potatoes for 15-20 minutes, or until fork-tender. Drain and set aside.

Step 3

While the potatoes are cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and carrots, and sauté for 5 minutes until softened.

Step 4

Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks, about 7-10 minutes. Drain excess fat if necessary.

Step 5

Stir in the tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Let it simmer for 5 minutes until the mixture thickens slightly. Stir in the frozen peas and cook for 2 more minutes. Remove from heat.

Step 6

Mash the cooked potatoes with the butter and milk until smooth and creamy. Season with additional salt and pepper if desired.

Step 7

Spread the meat and vegetable mixture evenly into the bottom of a 9x13-inch baking dish. Top with the mashed potatoes, spreading them out in an even layer. For added flavor, sprinkle the shredded cheddar cheese over the top, if using.

Step 8

Bake the Shepherd’s Pie in the preheated oven for 20-25 minutes, or until the top is golden and the filling is bubbly.

Step 9

Let the dish rest for 5 minutes before serving. Enjoy your hearty and comforting Shepherd's Pie!
