Ingredients

  • 2 cups All-purpose flour
  • 0.25 cups Granulated sugar
  • 1 tablespoon Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter (cold, diced)
  • 0.75 cups Heavy cream (plus extra for brushing)
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Optional coarse sugar (for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, diced butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 5

Pour the wet mixture into the dry ingredients and gently stir until the dough just comes together. Be careful not to overmix.

Step 6

Transfer the dough to a lightly floured surface and gently knead it 3-4 times until it forms a cohesive ball.

Step 7

Pat the dough into a circle about 1 inch thick. Use a knife or bench scraper to cut the dough into 8 equal wedges.

Step 8

Place the scones on the prepared baking sheet, spacing them about 2 inches apart. Lightly brush the tops with additional heavy cream and sprinkle with coarse sugar, if desired.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown on top.

Step 10

Let the scones cool slightly on the baking sheet before serving warm or at room temperature.
