Directions

Step 1

Pat the scallops dry with paper towels and season both sides with salt and black pepper.

Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil and 2 tablespoons of butter.

Once the butter has melted and begins to bubble, carefully place the scallops into the skillet in a single layer, making sure they don’t touch.

Sear the scallops for 2-3 minutes on each side without moving them, until a golden-brown crust forms. Remove the scallops from the skillet and set aside on a plate.
