  • 2 cups Cheddar cheese
  • 0.5 cups Parmesan cheese
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.

Step 2

Peel and thinly slice the potatoes into 1/8-inch rounds. Use a mandoline slicer for even thickness, if possible.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1–2 minutes until lightly golden, stirring constantly.

Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Simmer and cook for 3–4 minutes until the sauce thickens.

Stir in garlic powder, salt, and black pepper. Remove the saucepan from heat and mix in 1 1/2 cups of cheddar cheese and 1/4 cup of Parmesan cheese until melted and smooth.

Spread a thin layer of the cheese sauce on the bottom of the prepared baking dish. Layer one-third of the potato slices evenly in the dish.
