  • 1 piece bay leaf
  • 2 medium potatoes (optional)

  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large, heavy-based casserole dish over medium heat.

Step 2

Add the sausages and brown them all over. Remove the sausages and set them aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the casserole dish.

Step 4

Chop the onion, garlic, carrots, and celery. Add them to the casserole dish and sauté for about 5 minutes until softened.
