Ingredients

  • 750 grams Red onions
  • 2 tablespoons Olive oil
  • 100 grams Brown sugar
  • 100 ml Balsamic vinegar
  • 50 ml Red wine vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 2 sprigs Fresh thyme (optional, for garnish)

Directions

Step 1

Peel and finely slice the red onions into thin, even slices.

Step 2

Heat the olive oil in a large, heavy-bottomed pan over medium heat.

Step 3

Add the sliced onions to the pan and sprinkle with the salt. Stir gently to coat the onions in oil.

Step 4

Reduce the heat to low and cook the onions slowly for 20-25 minutes, stirring occasionally, until they are soft and caramelised to a deep golden-purple color.

Step 5

Once the onions are caramelised, add the brown sugar and stir well. Cook for another 5 minutes, allowing the sugar to dissolve and combine with the onions.

Step 6

Pour in the balsamic vinegar and red wine vinegar. Stir to deglaze the pan, scraping any stuck-on bits from the bottom of the pan.

Step 7

Let the mixture simmer on low heat for 15-20 minutes, stirring occasionally, until it thickens to a jam-like consistency.

Step 8

Season with ground black pepper and adjust salt if needed.

Remove from heat and let the chutney cool before transferring to sterilized jars for storage.

Store in the fridge and use within 2-3 weeks. Optionally, garnish with fresh thyme when serving for added aroma and flavor.
