  • 1 pound dried pinto beans
  • 6 cups water
  • 4 slices bacon
  • 1 medium yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 1 14.5-ounce can canned diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons optional chopped cilantro (for garnish)

Directions

Step 1

Rinse the dried pinto beans under cool running water and sort out any debris or damaged beans.

Step 2

In a large stockpot, combine the rinsed beans and 6 cups of water. Bring to a boil over high heat, then reduce the heat to low and simmer, covered, for 1 hour or until the beans are tender. Stir occasionally and add more water if needed to keep the beans submerged.
