  • 8 pieces Small flour or corn tortillas
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 0.5 cup Shredded cheese (optional)
  • 0.5 cup Sour cream or plain yogurt (optional)
  • 2 tablespoons Chopped cilantro (optional)
  • 2 teaspoons Hot sauce (optional)

Directions

Step 1

Peel the potatoes and cut them into small, bite-sized cubes (approximately 1/2-inch pieces).

Step 2

Place the potato cubes in a bowl of cold water and soak for 10 minutes to remove excess starch. Drain and pat them dry with a clean kitchen towel.

Preheat a large skillet over medium heat and add 3 tablespoons of olive oil.
