Ingredients

  • 200 grams Fresh garlic cloves
  • 240 milliliters White vinegar
  • 120 milliliters Water
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black peppercorns
  • 1 piece Bay leaf
  • 0.5 teaspoon Optional: Red chili flakes

Directions

Step 1

Peel the garlic cloves by lightly smashing them with the flat side of a knife and removing the skins. Rinse them well under cold water and set aside.

Step 2

In a small saucepan, combine the white vinegar, water, granulated sugar, and salt. Bring to a gentle simmer over medium heat until the sugar and salt are fully dissolved.

Step 3

Add the black peppercorns, bay leaf, and optional red chili flakes to the saucepan. Stir well and remove from heat.

Step 4

Place the peeled garlic cloves into a clean, sterilized glass jar (a 16-ounce jar works well).

Step 5

Pour the hot brine mixture over the garlic cloves, making sure they are fully submerged. Discard the bay leaf if desired.

Step 6

Seal the jar tightly and let it cool to room temperature on the counter. Once cooled, transfer the jar to the refrigerator.

Step 7

Allow the garlic to pickle in the refrigerator for at least 3 days before consuming to allow the flavors to develop. For best results, wait up to one week.

Step 8

Store in the refrigerator for up to 1 month. Use in salads, sandwiches, or as a tangy snack!
