Ingredients

  • 3 pounds Chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 whole Yellow onion
  • 4 whole Carrots
  • 4 cups Beef broth
  • 2 sprigs Fresh rosemary sprigs
  • 2 sprigs Fresh thyme sprigs

Directions

Step 1

Preheat the oven to 275°F (135°C).

Step 2

Season the chuck roast generously with salt and pepper on all sides.

Step 3

Heat the olive oil in a large Dutch oven over medium-high heat.

Step 4

Once the oil is hot, sear the chuck roast on all sides until beautifully browned, about 4 minutes per side. Remove and set aside.

Step 5

Cut the onions in half and cut the carrots into 2-inch pieces. Add the vegetables to the Dutch oven and cook for 2-3 minutes until they start to brown slightly.

Step 6

Remove the vegetables and set them aside.

Step 7

Pour about 1 cup of beef broth into the Dutch oven to deglaze it, scraping up the browned bits with a wooden spoon.

Return the roast to the Dutch oven, followed by the vegetables. Add the remaining 3 cups of beef broth to the pot.

Place the rosemary and thyme sprigs on top of the roast.

Cover the Dutch oven with its lid and transfer it to the preheated oven.

Cook the roast for about 4 hours, or until the meat is fork-tender.
