Ingredients

  • 6 large Fresh peaches
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 0.25 cup All-purpose flour
  • 2 tablespoons Cornstarch
  • 1 teaspoon Ground cinnamon
  • 0.125 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Unsalted butter
  • 2 pre-made Refrigerated pie crust
  • 1 large Egg
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Peel and slice the peaches into 1/4-inch thick slices, discarding the pits.

Step 3

In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, all-purpose flour, cornstarch, ground cinnamon, ground nutmeg, salt, and vanilla extract. Mix gently until the peaches are evenly coated.

Step 4

On a lightly floured surface, roll out one of the pie crusts and place it into a 9-inch pie dish, ensuring it covers the bottom and sides evenly.

Step 5

Pour the peach mixture into the prepared pie crust, spreading it out evenly. Dot the top of the filling with the unsalted butter, broken into small pieces.

Step 6

Roll out the second pie crust and place it over the peach filling. Trim any excess crust and crimp the edges to seal. You can also cut the top crust into strips and create a lattice pattern for a decorative touch.

Step 7

In a small bowl, whisk together the egg and water to make an egg wash. Brush the top crust with the egg wash to give it a golden shine.

Step 8

Using a sharp knife, cut a few small slits in the top crust to allow steam to escape during baking.

Step 9

Place the pie on the middle rack of the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 10

If the edges of the crust start to brown too quickly, cover them with aluminum foil to prevent burning.

Step 11

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours to allow the filling to set before slicing and serving.

Step 12

Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
