Ingredients

  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 1 medium Yellow onion
  • 2 cups Cremini mushrooms
  • 2 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 medium (8-inch) Flour tortillas
  • 2 cups Shredded cheese (cheddar, Monterey Jack, or mozzarella)
  • 2 tablespoons Fresh cilantro (optional)
  • 0 Sour cream (optional, for serving)
  • 0 Salsa (optional, for serving)

Directions

Step 1

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 2

Thinly slice the onion and add it to the skillet. Cook for 5-7 minutes, stirring occasionally, until the onions are soft and golden brown.

Step 3

While the onions cook, clean and slice the mushrooms. Mince the garlic cloves.

Step 4

Add the mushrooms to the skillet with the onions and cook for another 5-6 minutes until the mushrooms release their liquid and become tender.

Stir in the minced garlic, salt, and black pepper, and cook for an additional 1-2 minutes. Remove the mixture from the skillet and set aside.

Wipe the skillet clean with a paper towel and return it to medium-low heat. Brush the remaining 1 tablespoon of olive oil over the surface of the skillet.

Place one flour tortilla on the skillet. Sprinkle 1/4 cup of shredded cheese evenly over one half of the tortilla.

Spoon 1/4 of the mushroom and onion mixture on top of the cheese, then top with another 1/4 cup of shredded cheese. Fold the tortilla in half to cover the filling.

Cook the tortilla for 2-3 minutes per side, pressing gently with a spatula, until the cheese melts and the tortilla is golden brown and crispy on both sides.

Step 10

Repeat with the remaining tortillas and filling ingredients.

Step 11

Cut each quesadilla into wedges. Garnish with fresh cilantro if desired, and serve warm with sour cream and salsa on the side.
