Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 450 grams Button mushrooms, cleaned and sliced
  • 4 cups Chicken or vegetable stock
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper, freshly ground
  • 1 teaspoon Fresh thyme, chopped
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot, heat the butter and olive oil over medium heat until the butter is melted.

Step 2

Add the chopped onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the sliced mushrooms to the pot and cook for 7-8 minutes, allowing them to release their moisture and become golden brown.

Step 5

Pour in the chicken or vegetable stock. Stir to combine and bring the mixture to a gentle simmer.

Step 6

Let the soup simmer for 15 minutes to allow the flavors to meld.

Step 7

Using an immersion blender, puree the soup until smooth and creamy. Alternatively, carefully transfer to a countertop blender in batches and blend until smooth.

Step 8

Return the soup to the pot and stir in the heavy cream. Season with salt, black pepper, and fresh thyme. Heat through without boiling.

Step 9

Taste and adjust seasonings as needed.

Step 10

Ladle the soup into bowls and garnish with fresh parsley before serving.
