Ingredients

  • 2 medium zucchini
  • 2 medium (any color) bell peppers
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 cup shredded mozzarella cheese
  • 5 leaves fresh basil leaves

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Wash and slice the zucchini into thin rounds. Seed and slice the bell peppers into thin strips. Halve the cherry tomatoes.

Step 3

Peel and mince the garlic cloves.

Step 4

In a large mixing bowl, combine the zucchini, bell peppers, cherry tomatoes, olive oil, minced garlic, dried Italian seasoning, salt, and ground black pepper. Toss until the vegetables are evenly coated.

Step 5

Spread the vegetable mixture evenly onto a baking dish or oven-safe pan.

Bake the vegetables in the preheated oven for 15 minutes, stirring once halfway through the cooking time.
