  • 2.5 cups Chicken or vegetable stock
  • 0.5 cup Dry white wine

  • 1 small Onion, finely chopped
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

In a large microwave-safe bowl, combine the olive oil, minced garlic, and chopped onion. Microwave on high for 2 minutes until softened and fragrant.

Step 2

Add the Arborio rice to the bowl and stir to coat with the oil. Microwave on high for another 1 minute to lightly toast the rice grains.

Stir in the white wine and microwave on high for 2 minutes, allowing the liquid to slightly reduce.
