Ingredients

  • 15 oz canned cannellini beans
  • 15 oz canned chickpeas (garbanzo beans)
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 0.5 medium red onion
  • 0.25 cup fresh parsley
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 clove garlic
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Drain and rinse the cannellini beans and chickpeas thoroughly under cold water. Set them aside to drain completely.

Step 2

Quarter the cherry tomatoes and place them in a large mixing bowl.

Step 3

Peel the cucumber if desired. Dice it into bite-sized pieces and add it to the bowl with the tomatoes.

Finely dice the red onion and add it to the bowl.

Step 5

Chop the fresh parsley and mix it in with the vegetables.
