Ingredients

  • 6 whole Cucumbers (small, pickling variety)
  • 2 cups White vinegar
  • 1 cup Water
  • 2 tablespoons Sugar
  • 1 tablespoon Kosher salt
  • 4 whole Garlic cloves
  • 1 teaspoon Red pepper flakes
  • 1 teaspoon Black peppercorns
  • 6 sprigs Dill sprigs (fresh)
  • 1 whole Jalapeño (sliced)

Directions

Step 1

Wash the cucumbers thoroughly and slice them into rounds about 1/4-inch thick, or leave them whole if they are small enough for pickling.

Step 2

In a medium saucepan, combine the white vinegar, water, sugar, and kosher salt. Heat the mixture over medium heat, stirring occasionally, until the sugar and salt dissolve completely. Remove from heat and let it cool slightly.

Step 3

Prepare two clean, sterilized pint-sized jars. Divide the garlic cloves, red pepper flakes, black peppercorns, dill sprigs, and sliced jalapeño evenly between the jars.

Step 4

Pack the cucumbers tightly into the jars, leaving about 1/2 inch of space at the top.

Step 5

Pour the warm brine over the cucumbers, covering them completely, but leave about 1/4 inch of headspace in each jar.

Step 6

Tap the jars gently to release any trapped air bubbles. Seal the jars with lids and let them cool to room temperature.

Step 7

Refrigerate the pickles for at least 24 hours to allow the flavors to develop. For best results, let them sit for 3-5 days.

Step 8

Enjoy your hot and spicy pickles straight from the jar or as a zesty addition to sandwiches, burgers, or charcuterie boards!
