  • 1 cup frozen corn
  • 14.5 ounces canned diced tomatoes
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Add the ground beef to the pot and cook, breaking it up with a spoon, until browned and no longer pink, about 5-7 minutes. Drain any excess fat if necessary.

Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes, stirring occasionally, until the onion is softened and fragrant.
