Ingredients

  • 250 grams spaghetti
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic cloves
  • 200 grams button mushrooms
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 50 grams parmesan cheese
  • 10 grams fresh parsley
  • 0.5 cup pasta water

Directions

Step 1

Bring a large pot of salted water to a rolling boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.

Step 2

While the pasta cooks, thinly slice the garlic cloves and mushrooms. Grate the parmesan cheese and finely chop the fresh parsley for garnishing.

Step 3

In a large skillet, heat the olive oil and butter over medium heat until the butter is fully melted and begins to froth.

Step 4

Add the sliced garlic to the skillet and sauté for 1-2 minutes, stirring frequently, until fragrant and slightly golden.

Step 5

Stir in the sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until they release their moisture and become golden brown.

Step 6

Season the mushrooms with salt, black pepper, and red pepper flakes. Stir to combine the spices evenly.

Step 7

Reduce the heat to low and add the reserved pasta water to the skillet to create a light sauce.

Step 8

Toss the drained spaghetti into the skillet, ensuring the pasta is well coated with the garlic mushroom mixture.

Step 9

Remove the skillet from heat and mix in the grated parmesan cheese, allowing it to melt slightly.

Step 10

Serve the pasta hot, garnished with freshly chopped parsley and additional parmesan cheese if desired.
