Ingredients

  • 3 cups cooked white rice (cold, preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup frozen mixed vegetables (carrots, peas, and corn)
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 stalks green onions (sliced, for garnish)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium heat.

Step 2

Crack the eggs into the skillet and scramble them, cooking until just set. Remove the eggs from the skillet and set aside.

Step 3

Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir-fry the chopped onion until softened, about 2-3 minutes.

Step 4

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Toss in the frozen mixed vegetables and stir-fry for 3-4 minutes until heated through.
