Ingredients

  • 1 4-5 pounds Whole chicken
  • 1 large Yellow onion
  • 2 large Carrots
  • 2 Celery stalks
  • 4 Garlic cloves
  • 2 tablespoons Olive oil
  • 2 teaspoons Paprika
  • 1 teaspoon Dried thyme
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 cup Chicken broth

Directions

Step 1

Prepare the vegetables: Slice the onion into thick rings, chop the carrots into large chunks, and cut the celery stalks into 2-inch pieces. Crush the garlic cloves (no need to peel them).

Step 2

Place the prepared vegetables and garlic at the bottom of the crock pot to create a flavorful bed for the chicken.

Step 3

Pat the whole chicken dry with paper towels. Drizzle the chicken with olive oil, ensuring it’s evenly coated on all sides.
