Ingredients

  • 450 g Cremini or button mushrooms
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 2 Garlic cloves, minced
  • 2 Fresh thyme sprigs
  • 0.5 tsp Salt
  • 0.25 tsp Freshly ground black pepper
  • 1 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Clean the mushrooms by gently wiping them with a damp paper towel to remove any dirt. Trim the ends of the stems and slice the mushrooms evenly, about 1/4-inch thick.

Step 2

Heat a large skillet over medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of olive oil. Allow the butter to melt and the oil to heat until shimmering.

Step 3

Add the sliced mushrooms in a single layer (cook in batches if necessary to avoid crowding the pan). Let the mushrooms cook undisturbed for 2-3 minutes to achieve a golden sear.

Step 4

Stir the mushrooms and continue cooking for another 3-4 minutes, stirring occasionally, until they are softened and golden brown.

Step 5

Lower the heat to medium and add the minced garlic and thyme sprigs. Stir constantly for about 1 minute until the garlic is fragrant, being careful not to let it burn.

Step 6

Season the mushrooms with salt and black pepper, stirring well to distribute the seasoning evenly.

Step 7

Add the remaining 1 tablespoon of butter and toss the mushrooms to coat them in the glossy glaze.

Step 8

Remove the thyme sprigs and discard. Sprinkle the mushrooms with fresh parsley if using, and serve immediately.
