Ingredients

  • 6 large eggs
  • 4 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 medium (finely chopped) celery stalk
  • 1 stalk (finely sliced) green onion
  • 0.25 teaspoons (to taste) salt
  • 0.25 teaspoons (to taste) black pepper

Directions

Step 1

Place the eggs in a medium-sized saucepan and cover them completely with cold water, ensuring the water level is about 1 inch above the eggs.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let the eggs simmer gently for 9-12 minutes for hard-boiled eggs.

Step 3

Carefully drain the hot water and immediately transfer the eggs into a bowl filled with ice water to stop the cooking process and make peeling easier. Let them cool for at least 5 minutes.

Step 4

Peel the cooled eggs and chop them into small pieces or desired consistency. Transfer the chopped eggs into a mixing bowl.

Step 5

Add the mayonnaise, Dijon mustard, lemon juice, finely chopped celery, and sliced green onion to the bowl with the eggs.

Step 6

Season the mixture with salt and black pepper to taste.

Step 7

Gently mix all the ingredients together until well combined and creamy.

Step 8

Serve immediately on bread, in a wrap, over salad greens, or refrigerate for up to 3 days for later use.
