Ingredients

  • 113 grams Unsalted butter, cold and cubed
  • 50 grams Granulated sugar
  • 1 teaspoon Salt
  • 60 milliliters Ice water
  • 6 medium Granny Smith apples, peeled, cored, and thinly sliced
  • 100 grams Brown sugar, packed
  • 2 teaspoons Cinnamon
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Lemon juice
  • 1.5 tablespoons Cornstarch
  • 120 grams All-purpose flour (for crumb topping)
  • 90 grams Brown sugar (for crumb topping)
  • 80 grams Unsalted butter, melted (for crumb topping)
  • 1 teaspoon Cinnamon (for crumb topping)

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

In a large mixing bowl, combine 190 grams of flour, 50 grams of sugar, and 1 teaspoon of salt. Add 113 grams of cold, cubed butter.

Step 3

Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

Slowly add 60 milliliters of ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic wrap, and refrigerate for 20 minutes.

Step 5

On a lightly floured surface, roll out the chilled dough into a 12-inch circle and transfer it to a 9-inch pie dish. Trim and crimp the edges. Set aside.

Step 6

In another large bowl, toss the sliced apples with 100 grams of brown sugar, 2 teaspoons of cinnamon, 0.25 teaspoon of nutmeg, 2 tablespoons of lemon juice, and 1.5 tablespoons of cornstarch. Stir until the apples are evenly coated.

Step 7

Pour the apple mixture into the prepared pie crust and spread it into an even layer.

Step 8

For the crumb topping, mix 120 grams of flour, 90 grams of brown sugar, 1 teaspoon of cinnamon, and 80 grams of melted butter in a medium bowl. Stir until crumbly.

Step 9

Sprinkle the crumb topping over the apple filling, covering it completely.

Step 10

Bake the pie in the preheated oven for 45-50 minutes, or until the crumb topping is golden brown and the filling is bubbling.

Step 11

Let the pie cool for at least 2 hours before serving to allow the filling to set. Serve with whipped cream or a scoop of vanilla ice cream if desired.
