  • 1 cup tomato puree
  • 1 cup coconut milk
  • 0.5 cup vegetable stock or water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Heat the vegetable oil in a medium-sized saucepan over medium heat.

Add the finely chopped onion and sauté for 5-7 minutes, stirring frequently, until golden and soft.
