Ingredients

  • 4 medium (about 600g) Yukon Gold potatoes
  • 1 large (about 200g) Yellow onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 as needed Cooking spray
  • 0.25 cup Panko bread crumbs
  • 2 tablespoons Parmesan cheese (optional for added flavor)

Directions

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a medium-sized casserole dish with cooking spray.

Step 2

Wash and peel the potatoes. Slice them into very thin rounds (about 1/8 inch thick) using a sharp knife or mandoline slicer.

Peel the onion and slice it into thin rings. Separate the rings and set aside.
