Ingredients

  • 4 lbs Boston butt (pork shoulder roast)
  • 2 tbsp Olive oil
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • 1 tsp Onion powder
  • 1 cup Chicken or vegetable broth
  • 1 Yellow onion, sliced
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Brown sugar
  • 0.5 cup Barbecue sauce (optional, for serving)

Directions

Step 1

Pat the Boston butt dry with paper towels and rub it all over with olive oil.

Step 2

In a small bowl, mix together salt, black pepper, garlic powder, smoked paprika, and onion powder. Generously rub the spice mixture all over the meat.

Step 3

In the bottom of the crockpot, add the chicken or vegetable broth, apple cider vinegar, and brown sugar. Stir until combined.

Layer the sliced onion on the bottom of the crockpot, creating a bed for the pork to rest on.
