  • 4 pounds Bone-in beef short ribs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 Garlic cloves, minced
  • 1 cup Beef broth
  • 3 tablespoons Tomato paste
  • 1 cup Red wine
  • 2 tablespoons Worcestershire sauce
  • 3 large Carrots, cut into chunks
  • 1 Bay leaf
  • 3 Fresh thyme sprigs

Directions

Step 1

Season the short ribs generously with salt and black pepper on all sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the short ribs on all sides until browned, about 2-3 minutes per side. Remove the short ribs and place them in the crock pot.

Step 3

In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until fragrant and softened.
