Ingredients

  • 500 grams broccoli florets
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese (optional)
  • 1 tablespoon fresh parsley, chopped (optional garnish)

Directions

Step 1

Wash the broccoli thoroughly and separate the florets from the stems. If desired, peel the tough outer skin from the stems and roughly chop them.

Step 2

In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 4–5 minutes until translucent.

Step 3

Stir in the minced garlic and cook for an additional 1–2 minutes until fragrant.

Add the broccoli florets and stems to the pot, then pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 12–15 minutes, or until the broccoli is tender.
