  • 2 pieces boneless, skinless chicken breast
  • 1 cup oat groats
  • 2 medium carrot
  • 2 pieces celery stalks
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 8 cups chicken broth
  • 2 tablespoons olive oil
  • 1 leaf bay leaf
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Rinse the oat groats under cold water and set them aside to drain.

Step 2

Dice the chicken breast into bite-sized pieces and season lightly with salt and pepper.

Step 3

Peel and chop the carrot into small pieces. Chop the celery and onion into small dice. Mince the garlic cloves.

Step 4

Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
