Ingredients

  • 500 g baby potatoes
  • 150 g pancetta cubes
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 1 tsp honey
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, finely chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Wash the baby potatoes thoroughly. Cut them in half or into bite-sized pieces if they are larger.

Step 2

Place the potatoes in a large pot of salted water. Bring to a boil and cook for 12-15 minutes, or until the potatoes are tender when pierced with a fork. Drain and set aside.
