Ingredients

  • 2 Large artichokes
  • 1 Lemon
  • 2 Garlic cloves
  • 1 Bay leaf
  • 2 teaspoons Salt
  • 1 teaspoon Black peppercorns
  • 2 tablespoons Olive oil

Directions

Step 1

Start by preparing the artichokes: Rinse them under cool water to remove any dirt.

Step 2

Using a sharp knife, cut off the top 1 inch of each artichoke to remove the thorny tips.

Step 3

Cut off the stem flush with the base of the artichoke so it can sit flat.

Step 4

Rub the cut surfaces with a halved lemon to prevent browning.

Step 5

Peel the outer layer of the stem using a vegetable peeler if you want to keep it; it is also edible and will cook along with the artichoke.

Fill a large pot with enough water to cover the artichokes and bring to a boil.

Add the salt, black peppercorns, bay leaf, and the juice of the remaining half of the lemon to the pot.
